Wild Raspberries Over Ice-Cream Perfect On A Hot Summer Night

  A few weeks ago I wrote that Wild Raspberry season was in full swingRoy Kelley who always brightens everyone's day with his flower photography mentioned he would like to see recipes using using Wild Rapberries.

I love cooking but am not great at providing recipes, I just add a pinch of this and that.

So, the recipe I am offering here is wild raspberries and ice-cream - perfect for a hot summer night, and we will be having a few hot summer nights this week.

Here are the ingredients for Wild Raspberries and Ice-Cream:

  • Some butter
  • Brown sugar
  • Fresh minced ginger
  • Rum
  • Raspberries
  • Really Vanilla Bean Ice-cream the truth is, use your favorite ice-cream

In a pan, slowly melt butter and add sugar and ginger; then add in raspberries.  Next, add rum, feel free to substitute here.Raspberries cooking

Be careful turning the raspeberries in the liquid, try to keep them as whole as possible

  • Get out the ice-cream and put it into your favorite ice-cream bowl, then spoon the raspberries with liquid over it.

Yes, wild raspberries over ice-cream is perfect on a hot summer night.  How do I know this? Because my boys tell me so, and I will have to make this many times this summer.  Can't wait for snow in the forecast :)

What a great idea.  I am going to have to make that over the weekend.  It will cool anyone down -- and it is beautiful and tasty.  A lovely photo of that delicious treat!

This sounds so good!  I love raspberries.  I also love the hot nights - but unfortunately I think that every where in the US is hot except Seattle!  This has been a miserably cold and wet summer!

Joan it is good, I was trying to get some work done and they  kept begging me to make it.   Then I remembered Roy's request so I made it and turned into a blog post.   I hope you make it, very easy but delicious.

Debbie if you love raspberries this is a great summer treat.  We could use some rain here, I hope it warms up in Seattle, I love your city.
