A few weeks ago I wrote that Wild Raspberry season was in full swing. Roy Kelley who always brightens everyone's day with his flower photography mentioned he would like to see recipes using using Wild Rapberries.
I love cooking but am not great at providing recipes, I just add a pinch of this and that.
So, the recipe I am offering here is wild raspberries and ice-cream - perfect for a hot summer night, and we will be having a few hot summer nights this week.
Here are the ingredients for Wild Raspberries and Ice-Cream:
- Some butter
- Brown sugar
- Fresh minced ginger
- Really Vanilla Bean Ice-cream the truth is, use your favorite ice-cream
In a pan, slowly melt butter and add sugar and ginger; then add in raspberries. Next, add rum, feel free to substitute here.
Be careful turning the raspeberries in the liquid, try to keep them as whole as possible
- Get out the ice-cream and put it into your favorite ice-cream bowl, then spoon the raspberries with liquid over it.
Yes, wild raspberries over ice-cream is perfect on a hot summer night. How do I know this? Because my boys tell me so, and I will have to make this many times this summer. Can't wait for snow in the forecast :)
